Due to its appearance and high rarity, the premium ingredient known as bluefin tuna (hon maguro) is referred to as the “black diamond of the sea.” Fresh, wild bluefin tuna caught in Japan’s coastal water is chopped finely and prepared as a tataki.
The tuna is beautifully shaped into a round shape on top of red vinegared sushi rice, hand-rolled with seaweed, and delicately topped with thinly shaved tuna flakes. The presentation resembles ice cream itself.
